Winemaking
Our approach here follows the philosophy for handmade winemaking that is employed across all of our wines. Specifically for this Shiraz: cold-soaking and hand-plunging in open fermenters, and cool-fermentation between 18ºC and 24ºC, to preserve fruit flavours and characteristics; wild fermentation and extended maceration, for greater complexity; basket pressed and maturation in a combination of new and old French oak, before barrel-selection for optimal flavour and texture in accordance with our own house style.

The Wine
This Shiraz is an intensely flavoured, rich wine, inky black to purple in colour with lovely garnet hues. It displays intense Barossa fruit aromas of blackberry, dark chocolate, toasty oak and crushed violets with hints of vanilla, cloves and and star anise. The palate is opulent and intense with delicious ripe forest fruits supported by smokey oak and sweet spice flavours. Generous soft tannins balanced with soft acidity give the wine great power and drive and lead to a focussed and lingering finish. Will reward extended cellaring.
Decant before serving.
“It's fabulous. Silky texture, tannins velvety and savoury, the drive is long and it feels effortless.”
